FOSS technology reveals the true fat content of ground meat

A major Australian supermarket chain selling over 1.5 million packets of ground meat per week is using FOSS x-Ray analysis technology to guarantee the stated fat content. Measurements made with a FOSS MeatMaster analyser are so accurate that the supermarket has introduced a 5 star rating for products with a fat content of 5% or less. X-Ray Technology

Dual source - high accuracy

MeatMaster™ uses two individual X-ray sources for superior accuracy. Meat is transported on a conveyor through the machine and analysis takes place within a closed cabinet. This dual source system avoids the ‘noise’ problem that often negatively affects single X-ray source systems.

CasesSan Angelo and the MeatMaster in use

At San Angelo Packing in Texas, US, the MeatMaster is used to help in standardizing 1000 kg combos of trimmings and to detect foreign objects.

CasesStandardisation of minced meat for consumer packs

Mr. Hans Jürgen Kummer, General Manager of Schiller Fleisch, says: “With MeatMaster we carry out fat analysis, weight determination and most importantly, checks for foreign objects allowing us to offer very safe products. MeatMaster allows us to always offer fresh and above all standardised and analysed products.“

Superior accuracy

With dual X-ray technology, you can make the meat fat content of end products consistent to an accuracy of between 0.4-0.6% and meet demands from consumers and the authorities every time.

Simplify control procedures

This in-line solution gives results in real-time so you can avoid the cost and extra work involved in routine sampling procedures.

Improve production efficiency

By continuously monitoring production, you can make optimal use of raw materials to get the fat content exactly right all the time and avoid the wastage of out-of-specification products.

Adapt for pork, beef or poultry

Pre-calibration enables you to use MeatMaster™ on a wide range of applications with only minimal adjustment to local conditions.
